El horno de Babette

Traditional bakeries often clearly segregate the front and back areas of the shop, allowing customers to only glance at the array of freshly baked goods, without truly experiencing the warmth and craftsmanship behind them. In contrast, ZOOCO ESTUDIO’s design approach seeks to break down these boundaries, blending the traditionally separate spaces into one cohesive environment that feels more like a home. Here, the display of freshly baked bread serves not only as a showcase but as the heart of the space, transforming customers from passive consumers into active participants. They are invited to stroll, savor the aroma, and engage with the bread’s baking process, flavors, and stories.
To evoke this sense of spatial intimacy aligned with everyday life, the design team integrates materials such as wood, textiles, and glass—elements that exude a natural warmth. This is complemented by focused yet gentle lighting, reminiscent of twilight’s soft glow, which soothes the sharp edges of a conventional commercial environment. Through this subtle transformation, Babette’s bakery transcends the rigid “sales framework” and becomes a domain embracing humanity and the sharing of flavors. It conveys a lifestyle quality that resonates both locally and within a global context.

This entire concept is articulated across three stores in Madrid, each symbolized by a particular domestic archetype: the “dining room,” the “workroom,” and the “kitchen.” In these different settings, customers can project their own life experiences. Each store is like a tangible “scenic design narrative,” underscoring that bread is not merely a necessity of life, but also the intersection of sensory perception and thoughtful reflection.

General Díaz Porlier 34 Store: The Poise of a Dining Room

At the General Díaz Porlier 34 store, the interior takes on the character of a dining room. A solid oak table stands at the center, much like a family dinner table, with an array of breads displayed upon it. Woods, textiles, and glass converge to create a gentle spatial language. Under focused yet warm lighting, the bread’s forms and hues feel as if they are part of a familiar, everyday moment. Here, customers find themselves naturally at ease—encountering not just merchandise, but the calm and comfort of a home dining table.

Orellana 16 Store: An Honest Echo of the Workroom

The Orellana 16 store draws inspiration from the baker’s workroom. A central display table is surrounded by metal frames, microcement, terrazzo, and glass—industrial elements arranged with care. These textures carry a certain earnest solidity, evoking the dedicated, day-to-day focus of true artisans. Yet warm lighting softens any harshness, sustaining an atmosphere that remains honest and genuine, while also allowing a gentle sense of dialogue. Here, bread manifests as an ongoing labor, a reminder that the warmth of craft endures through daily life.

Paseo de la Habana 52 Store: A Kitchen’s Everyday Memory

At the Paseo de la Habana 52 store, the concept shifts to a kitchen-like setting. A round wooden table quietly occupies a tiled area, much like a work surface just above the kitchen floor. Tiles of various sizes are arranged unevenly across the walls, while microcement and sprayed cement treatments on the floor and wall surfaces add layers of depth. Mirror veneers allow light to flow freely, lending the space a refreshing clarity amid its warmth. Here, bread emerges as if fresh from the kitchen oven—infused with the warmth of everyday life and the simplicity of daily routines, much like a morning sunbeam lighting up a familiar scene. Traditional craft thus transforms into something to be savored and considered as part of ordinary life.
Across all three of Babette’s Madrid locations, the bakery extends beyond a mere retail setting and becomes interwoven with the narrative of “home.” Through a meticulous arrangement of materials, lighting, and structure, customers sense an inherent quality of life—akin to the gentle continuity of daily existence. The interplay of spatial configuration and design language becomes a gentle dialogue between people and food. This approach not only upends the conventional bakery framework but also echoes the deeper cultural and spiritual significance that bread carries as a life essential.
